Day 8: Feeling Great!

I woke up and Danielle had made a mystery concoction.  We still do not exactly remember what was in it.  Thats the beauty of having a vitamix.  You can just get up half asleep and throw some fruits and veggies in the blender and hit a button.  I know it had watermelon, clementines, spinach, and orange juice concentrate in it.  Since Im not very sure what the recipe is I am not going to post it.  But it was very good!

For lunch however, we were fully a wake and do remember the recipe.  We took yesterdays Tortilla soup and added some lentils and fresh corn. We heated it up and it was fantastic.  We also ate leftover hummus.  It was a fantastic meal.

ImageWe were doing some laundry and selling some stuff on craigslist for most of the day.  During which Danielle snuck off to the vitamix and created the most potent drink I have ever tasted.  Think of how much veggies you would put into a juicer for a full cup of juice. She put that much of Kale, spinach, carrots, celery, and just a little bit of Pineapple.   I think this was the recipe.

3 celery stalks

3 cups of spinach

1 cup of kale

2 carrots

1 chunk of pineapple!

Yes just one chunk of pineapple!  If you have been an avid smoothie maker, or juicer, you know that you should put in even amounts of fruits and veggies if you want to get a good taste.  If you put in all vegetables, it usually taste very leafy and earthy.  The more fruit you put in the better the resulting taste.  This thing was mean, green, and not lean at all, it was heavy! It was gnarly! It was more fiber than anyone should drink in one sitting!  After drinking a gulp we both let out a screech and made a very bitter face.  We pushed each other to finish our glasses in about a couple of minutes.  It was the toughest two minutes during this whole challenge.

However we both felt amazing afterwards.  There were so many micronutrients in those glasses, that we probably did not have to eat any more vegetables for the rest of the day.

Even though we did not need to eat anymore vegetables, we got hungry again.  This dish Danielle got really creative with.

Danielle’s Nutri Garlic bowl

Bowl Ingredients:

1 pack of firm tofu

3 cups of spinach

2 sweet potatoes

1/4 cup of olive oil

1/2 cup of frozen corn

1 ripe avocado

teaspoon of paprika

teaspoon of cinnamon

Dressing Ingredients:

1/2 cup of organic olive oil

6 medium garlic cloves

1 cup of nutritional yeast

1 cup of purified water

1 tablespoon of raw soy sauce

Directions:

1. Cut up sweet potato into chunks, sprinkle on paprika and cinnamon.  Bake for 20 min on 350.

2. Peel and chop avocado.

3. Place all ingredients for dressing into vitamix blender in order listed.  Select variable 1.  Press start and slowly increase speed to high.  Blend for 30 seconds or until creamy.

4. Saute tofu in olive oil until it is brown on both sides.

5. Very lightly saute spinach on low temp in the rest of the olive oil just to shrink it.

6. cook corn in microwave for 1 minute.

7. Put everything in a bowl, or multiple bowls and add dressing.

This was an amazing dish indeed.  Very flavorful.  The dressing almost tasted like cheese. I praised my wife over and over again.  It was one of the best veggie dishes I have ever had hands down.  Quite an improvement from the Green Drink that she forced me to drink earlier.  Just kidding of course.
